2-Ingredient Lemon Bars
Did you know that you can make lemon bars with just two ingredients? If you have an angel food cake mix and some lemon pie filling in your pantry, you are just minutes away from some very good lemon bars. These 2-Ingredient Lemon Bars are different, of course, from the layered lemon bars we are used to, but something anyone can make at the drop of a hat. They are moist and lemony and there will be no leftovers.

There are two kinds of angel food cake mixes – make sure you purchase the mix that has only one step, and not the mix with two packets in it because the two packet kind doesn’t work and you will have a mess. Although I haven’t tried yet, you can use other flavors of pie filling to make other flavors of bars, such as cherry, raspberry, blueberry, peach, etc. You'll want to keep the ingredients on hand in the pantry at all times for emergencies (guests dropping by or midnight cravings). This recipe is a keeper.

32 Bars

1 16 oz. package angel food cake mix (one step – do not use an angel food cake mix with two packets in it because it won’t work)
1 21 oz. can lemon pie filling

  1. Preheat oven to 350°.
  2. Spray a 9" x 13" shallow glass baking dish with non-stick spray.
  3. Whisk together the cake mix and lemon filling (or use a mixer and mix at low speed).
  4. Spread evenly in the prepared baking dish.
  5. Bake 25-30 minutes until set.
  6. Remove from the oven and cool thoroughly before cutting into 32 squares.
