Strawberry Angel Parfaits Recipe
Fresh strawberries are a sure sign of spring, and while they are good just as they are, they are especially good in springtime desserts. These Strawberry Angel Parfaits showcase fresh strawberries beautifully, and the parfaits can be made a day or two ahead. If you’re serving a large crowd, or don’t have 18 parfait glasses or glass ramekins, you can also layer the ingredients in a trifle bowl. You’ll get oohs and aahs and lots of requests for the recipe.

You may notice that the recipe calls for Raspberry flavored Danish Dessert rather than strawberry. The reason is that the pudding mix has artificial flavors which are noticeable when you use imitation strawberry with fresh strawberries. Using raspberry flavor emphasizes the fresh strawberries.

18 Servings


3/4 cup water
1 3 oz. package raspberry gelatin
3/4 cup sugar
1/2 cup ice cubes

2 cups heavy cream, whipped to stiff peaks

8 cups fresh berries, divided
8 cups angel food cake, cut into 1" cubes

1 package Raspberry Danish Dessert
1 1/2 cups water

Whipped cream, for garnish
Strawberry, cut in half, for garnish
Mint sprigs, for garnish

  1. Bring the water to a boil in the microwave; add the gelatin and sugar and stir until dissolved.
  2. Add the ice cubes, stir till melted, then put the mixture in the freezer or fridge while you are preparing the remaining ingredients.
  3. Mix the cooled gelatin mixture into the whipped cream; coarsely chop half of the berries and fold them into the whipped cream mixture along with the cake squares.
  4. Whisk together the Danish Dessert and water; microwave 3 minutes. Whisk until smooth; microwave an additional 2-3 minutes or until boiling.
  5. Slice the remaining berries and stir them into the Danish Dessert Mixture.
  6. Fill 18 parfait glasses half-way full with the whipped cream mixture. Drizzle some of the Danish Dessert mixture over, then top with more of the whipped cream mixture and some of the Danish Dessert Mixture.
  7. Cover and refrigerate.
  8. To serve, top with whipped cream and garnish with a strawberry half and mint sprig.

Note: If you prefer, you can layer the ingredients in a large trifle bowl instead of parfait glasses.
